One Bite Brownies
2 cups unbleached all-purpose flour
1 cups white sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup vanilla soy milk
1/4 cup vegetable oil
1/4 cup vegetable oil
3/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 teaspoon vanilla extract
1/3 cup semi-sweet vegan chocolate chips
Preheat oven to 350. Combine all ingredients in a large bowl and mix well. Spoon into mini muffin cups, filling cups almost full. Bake for about 20-25 minutes, until top is no longer shiny. Remove from oven, let cool for 1 minute in pan, then remove to wire rack to cool. Makes 3 dozen mini brownies.
